Goat Milk, Hard, Thermized
Inspired by Italian sheep milk cheeses (hard pecorinos) Willi Schmid ages this goat milk cheese in a basket which gives it the typical relief. It is indeed like a pecorino, but being goat instead of sheep the Caprinello is not oily.
This is a cheese with many uses, and since it can be shaved or grated extremely suited for cooking. It is also a very sturdy cheese than ages well. Shelf life is not a problem.
