Berner Oberlaender Hobelkaese

This is not the younger, but the smaller sibling of the Sbrinz. It is made like the Sbrinz, although it ages faster since it is about 1/4 the size of its big brother. It comes from the Bernese Alps and is summer production. As it is tradition in the area, the cheese is usually shaved, you get these wonderful thin rolls. Like the Sbrinz the Berner Oberlaender goes with almost everyting, it is welcomed as a snack, an aperitive, or on a cheese plate. It is also well suited for cooking.
