Cow Milk, Soft, Pasteurized
The Alpenchili is a new creation by Ueli Moser, inspired by the alpine peppers of the Bernese Alps. The dried and minced "Alpenchilis" cover the white mold top, and together with the pepper-garlic mix in the core the provide a soft cheese that is "aromatic-fruity" as Ueli Moser describes it. He uses only pasteurized organic whole milk.
The Alpenchilis have a long history, they were also used in medical remedies and are popular in herb and spice mixes.
