Alchemist’s Nº 1: Hay Bits

In the UNESCO Biosphere Entlebuch at the foothills of the central Swiss Alps is located the Gasthaus (Restaurant) Rössli of Michelin-starred chef Stefan Wiesner. Together with the mountain dairy in the village of Marbach he created this mountain cheese which contains straines or bits of the hay that the farmers cut in the mountains in the summer to feed their animals in the winter.
"Hay Bits" is the first in the series "The Alchemist's Cheeses", more will follow. All these cheeses carry the official label "Certified Mountain Meadow Milk" which garantuees that the animals are only fed with grass and hay and that the graze in certified mountain zones.
